Recipe for January

Jackfruit is the largest tree-borne fruit in the world, reaching up to 50 kg in weight and 60-90 cm in length.  A mature tree can yield up to 700 fruits per year, each weighing 0.5-50 kg.

Jackfruit is adapted to humid tropical and subtropical climates; it thrives at altitudes below 1000m.

Jackfruit Curry

Provides energy, protein, iron and calcium and is excellent for lactating mothers. The leaves help in diabetes, insomnia and snakebite.

Serves 4

Ingredients:

  • 1/2 pint coconut milk
  • 1/2 lb jakfruit kernels
  • 1 onion chopped
  • 1 green chilli, chopped
  • 1" piece cinnamon
  • 1/2 t saffron
  • 1/4 t fenugreek
  • 1/2 t pepper
  • 1/2 t salt
  • 1/2 t curry powder

Method:

  1. Cut the kernels into strips and wash.
  2. Boil them with the rest of the ingredients
  3. Simmer till tender
  4. Add the coconut milk and boil for five minutes
