Ziziphus Jujube Cake (Ber)

Ber is a tropical fruit (also known as Indian jujube) which grows from the tree species Ziziphus mauritiana Lamk. The tree grows widely in most dry tropical and subtropical regions of the world. It's throught to be native to tropical Asia, from where it was carried by seafaring traders to Africa and Australasia. The Ber fruit has high sugar content and high level of vitamins A & C, carotene, phosphorous and calcium.


Ingredients

  • 1 cup sugar
  • 1/2 cup butter
  • 2 cups dried, minced jujube
  • 1 cup water
  • 2 cups wheat flour
  • 1 teaspoon soda
  • 1/2 teaspoon salt


Method

  • Bring the sugar, butter and dried minced jujube to boil and set aside to cool
  • Sift wheat flour, soda and salt together and then add to the above mixture
  • Bake at 325° F
